Potato, cauliflower & ginger puree

Ingredients list

  • 1 big jacket potato
  • ½ cauliflower
  • 1 apple
  • 1 pinch ginger (preferably fresh)
  • 1 tablespoon oil (Preferably coconut, flaxseed or olive oil of high quality)
  • 1 teaspoon lemon juice
  • 30g butterbeans or white beans (Can be omitted)
Preparation

Soak the beans for min 24 hrs. in plenty of water. Pour of the water and boil them in approx. 60 min until they are tender.

Step 1

Peel the potatoes and apples and cut these into smaller pieces. Remove the central stalk and the leaves from the cauliflower and cut into 4 smaller pieces.

Step 2

Boil potato, cauliflower and apple in plenty of water. If fresh ginger is used, this should be added. When the vegetables are tender, sift the liquid (save this).

Step 3

Sift the beans (No need to save the liquid).

Step 4

Blend the vegetables and the beans with ½ - 1dl of the saved liquid from the boiled vegetables.

Step 5

During blending add oil, vanilla powder, and lemon juice. If turmeric powder is used, this should be added. Blend until you have desired consistency.
